
HOW TO MAKE LOBSTER SPEARS

Raw lobster tails . . . . 8 oz. - 10 oz.
Parsley . . . . . . . . . 6 sprigs
Belgian endive . . . . . . 2 stalks
Avocado . . . . . . . . . . 1
Chives (fresh) . . . . . . . 12 strands
Mayonnaise . . . . . . . . 2 tablespoons |

Step one
- Slice open lobster from underneath tail and remove meat
- Cut into 3/8" squares
- Slice avocado into thin 1/8" strips
- Mince (chop fi nely) chives
Step two
- Preheat 2 tablespoons of olive oil in pan
- Add lobster and cook over medium heat for approximately four minutes, stirring occasionally
- Let cool and place in small bowl
- Add mayonnaise and mix
- Salt and pepper to taste
Step three
- Remove twelve leaves from endive stalks
- Place 1 slice of avocado in each leaf
- Add a small portion of lobster mix on top of avocado
- Sprinkle minced chives on top of each spear
- Garnish with parsley and serve
