HOW TO MAKE LOBSTER SPEARS

INGREDIENTS
Raw lobster tails . . . . 8 oz. - 10 oz.
Parsley . . . . . . . . . 6 sprigs
Belgian endive . . . . . . 2 stalks
Avocado . . . . . . . . . . 1
Chives (fresh) . . . . . . . 12 strands
Mayonnaise . . . . . . . . 2 tablespoons
Lobster Spears
Step one
  • Slice open lobster from underneath tail and remove meat
  • Cut into 3/8" squares
  • Slice avocado into thin 1/8" strips
  • Mince (chop fi nely) chives
Step two
  • Preheat 2 tablespoons of olive oil in pan
  • Add lobster and cook over medium heat for approximately four minutes, stirring occasionally
  • Let cool and place in small bowl
  • Add mayonnaise and mix
  • Salt and pepper to taste
Step three
  • Remove twelve leaves from endive stalks
  • Place 1 slice of avocado in each leaf
  • Add a small portion of lobster mix on top of avocado
  • Sprinkle minced chives on top of each spear
  • Garnish with parsley and serve
Serves 4
